Job Title: Sous Chef

Location: Lekki, Lagos
Employment Type: Contract

Job Objective

  • To contribute to and produce the highest possible food quality in their own section, following appropriate food portion control, recipes, Upbeat's corporate guidelines, and service concepts.

Principal Duties and Responsibilities

  • Ensure the right amounts of food are prepared for forecasted covers, special functions, and reservations.
  • Implement proper rotation of food in the "Mise en place."
  • Maintain the highest standards of quality and portion control, prepare requisitions, check expiry dates, identify slow-moving items, and ensure proper storage.
  • Maintain operating equipment and report any necessary repairs.
  • Consult with the Head Chef regarding suggestions to improve quality.
  • Adhere to Upbeat Restaurant standards of food quality, preparation, recipes, and presentation.
  • Ensure proper seasoning, portions, and appearance of food.
  • Prepare and properly set up all food orders according to recipes and presentation standards.
  • Minimize spoilage and wastage.
  • Store food correctly, covered and dated, using appropriate methods.
  • Follow food safety and sanitation laws and practices.
  • Actively coordinate the production and preparation of all food items within the assigned area, ensuring a smooth and efficient operation.
  • Perform any other duties requested by the Head Chef.

Health and Safety:

  • Adhere to all health, sanitation, food safety rules and regulations.
  • Report all potential and real hazards immediately.
  • Possess solid knowledge of the kitchen's fire, emergency, and bomb procedures.
  • Maintain high standards of personal hygiene, dress, appropriate uniform, appearance, and conduct.
  • Work safely, coordinating tasks to avoid harm or injury to oneself and others.
  • Anticipate possible hazards and conditions to prevent mishaps.

Miscellaneous:

  • Attend meetings and training required by the Head Chef.
  • Possess solid knowledge of restaurant fire, bomb, and emergency procedures.
  • Understand restaurant health and safety policies and procedures.
  • Be informed about restaurant corporate marketing and promotional programs.
  • Maintain a clean, tidy, and well-organized working area, materials, and company property.
  • Stay updated on and possess good knowledge of F&B promotions.
  • Regularly check restaurant reservations.
  • Accept a flexible work schedule necessary for uninterrupted food production.
  • Continuously seek to enhance knowledge of their job function.

Competency and Skills Requirements

  • Candidates should possess relevant qualifications with 3+ years relevant work experience.
  • Proven experience as a chef.
  • Excellent use of various cooking methods, ingredients, equipment, and processes.
  • Ability to multitask and work efficiently under pressure.
  • Knowledge of best cooking practices.

Person Specification:

  • Good grooming and professional outlook.
  • Willingness to work flexible hours, including evenings, weekends, and holidays, as required by the business.
  • Strong attention to detail and ability to work under pressure.
  • Demonstrable experience of applying flair and innovation to create an overall customer experience.
  • Good interpersonal skills.
  • Ability to work effectively as part of a team.

Salary
N150,000 - N160,000 Monthly.
